Green Sprouts Gazpacho
This Green Sprouts Gazpacho dish was my dinner on Day One of the Juice Fast and its not bad at all! Sprouts are super alkalising and come loaded with vitamins, minerals and enzymes for easy digestion. Serves 1.
Ingredients:
- Handful of baby spinach
- Handful of alfalfa sprouts
- Handful of fenugreek sprouts
- 4 sundried tomatoes – soaked to soften (place in hot water for 20 minutes)
- 4T basil – torn
- 4T coriander – torn
- 1 ripe roma tomato
- 1T shrio miso paste
- 1/2 avocado
- 1/4C red onion
- 1 clove garlic
- Juice of half a lemon
- Filtered water
- Pinch himalayan sea salt
- Cracked black pepper
Method:
Combine all the ingredients in a high speed blender and blend with 1 cup of filtered water. Adjust to taste and serve in a soup bowl.

If it’s winter time you may warm the soup up on the stove, simply place in a pot and stir gently over low heat, remove just before the first wisp of steam rises.
