Sea Vegetable Salad

This sea vegetable salad was a winner at my recent Rawsome Lunches Workshop. Its a great salad to add in some sea vegetables of your choice.

Ingredients for sour cherry marinade:

  • 1/2C dehydrated sour cherries or inca berries
  • 3T raw agave syrup
  • 1/4C Apple Cider Vinegar (ACV)
  • 2 drops stevia

Method:

Combine all ingredients in a bowl and soak for half an hour or so. Drain and set aside.

Ingredients for miso dressing:

  • 1/2C miso shiro
  • 1/4C ACV
  • Juice 1 lemon
  • 1/4C chopped ginger
  • 1 clove garlic
  • 1/4C sesame oil
  • 3T dark raw agave
  • Few drops of toasted sesame oil

Method:

Combine all ingredients in a high speed blender, adjust to taste and set aside.

Ingredients for salad:

  • 3T arame, soaked 10 mins, drained
  • 1T wakame, soaked 10 mins, drained
  • 3 beets, julienned
  • 1 white radish, julienned
  • 1 green onion, sliced
  • bunch watercress, chopped
  • 2T each of white & black sesame seeds

Method:

Combine all ingredients except sesame seeds in a bowl, mix by hand to combine add sour cherries, and miso dressing. Stir to combine. Garnish with sesame seeds and serve.
