Sea Vegetable Salad
This sea vegetable salad was a winner at my recent Rawsome Lunches Workshop. Its a great salad to add in some sea vegetables of your choice.
Ingredients for sour cherry marinade:
- 1/2C dehydrated sour cherries or inca berries
- 3T raw agave syrup
- 1/4C Apple Cider Vinegar (ACV)
- 2 drops stevia
Method:
Combine all ingredients in a bowl and soak for half an hour or so. Drain and set aside.
Ingredients for miso dressing:
- 1/2C miso shiro
- 1/4C ACV
- Juice 1 lemon
- 1/4C chopped ginger
- 1 clove garlic
- 1/4C sesame oil
- 3T dark raw agave
- Few drops of toasted sesame oil
Method:
Combine all ingredients in a high speed blender, adjust to taste and set aside.
Ingredients for salad:
- 3T arame, soaked 10 mins, drained
- 1T wakame, soaked 10 mins, drained
- 3 beets, julienned
- 1 white radish, julienned
- 1 green onion, sliced
- bunch watercress, chopped
- 2T each of white & black sesame seeds
Method:
Combine all ingredients except sesame seeds in a bowl, mix by hand to combine add sour cherries, and miso dressing. Stir to combine. Garnish with sesame seeds and serve.
