Home Made Dukkah Recipe

My addiction to Dukkah continues … was buying it nearly every week at the grocery store, lordy knows why as you get the teeniest tiniest amount for about $5!

So I decided to make my own home made Dukkah recipe.

It turned out amazing!

Dukkah is so versatile, sprinkle on salads, on hummus, sauerkraut, roll in roasted veges – great with roast pumpkin, cucumber, or your favourite meats.

Current fave on rotation, is using the Dukkah spice mix and rolling it in cauliflower florets before roasting them.

The flavour of middle eastern spices, nuts and seeds goes so well with it!

Try out this home made Dukkah recipe below, one batch makes about 400g. Waaay more than you get in the store.

I keep mine in an airtight jar in the fridge for maximum freshness.

Ingredients:

  • 1C almonds

  • 1/2C sesame seeds

  • 2T cumin seeds

  • 2T coriander seeds

  • 1/4C pumpkin seeds

  • 1/4t turmeric

  • 1t black pepper

  • 1t himalayan salt

  • Optional: 1t smoked paprika

    OR 1t chilli flakes

Method:

Turn oven on, and preheat @180°C.

In a baking tray lined with baking paper, place almonds, pumpkin seeds and sesame seeds on baking paper lined baking tray.

Place in oven and cook for 5 mins or until golden. Set aside to cool.

Heat frypan over medium heat. Add coriander and cumin seeds. Stir continuously for 1-2 minutes until aromatic. Remove from heat and allow to cool.

In a food processor, place the almonds, pumpkin seeds, sesame seeds and pulse until coarsley ground.

Add the coriander seeds, cumin seeds and pulse again.

Finally add the s&p, and paprika or chilli flakes if using (I used both for extra flavour!). And pulse until you get coarse breadcrumb mixture.

Transfer to a glass jar and keep in fridge and use for when you’re wanting to spice up your dish!
