Chocolate Afghans New Zealand’s Famous Cookies
Being a Kiwi we grew up on Chocolate Afghans, New Zealand’s famous cookies.
They were a staple in many NZ households growing up.
My Nana and Mum were avid bakers and Chocolate Afghans were always on high rotation.
BTW – I have no idea why the are called Afghans but if someone knows, please enlighten me!
These are not the original recipe, I have upgraded most of the ingredients with healthier versions and have made them more gym bunny friendly with extra protein and good fats.
They turned out absolutely delicious and the entire batch was devoured by loved ones in just two days!
So go grab the ingredients and go make!
Ingredients for the Chocolate Afghans New Zealand’s famous cookies:
- 200g organic butter or vegan butter, room temp, chopped into cubes
- 1/2C coconut sugar – powdered – I use a dry blender jug and blend until powdered
- 1C GF flour
- 1/4C plant based protein powder – I used vanilla flavour
- 1/4C cacao powder
- 1/2C almond milk
- 2C cornflakes
- Whole walnuts to garnish
Method:
Pre heat oven to 180°C. Line 2 x baking trays with baking paper.
In a bowl, beat the butter and sugar together using an electric mixer until creamy.
Then sift in the cacao powder, GF flour and protein powder.
Add the milk and stir.
Lastly, add the cornflakes and stir until well combined.
Using a teaspoon, scoop a heap out and place onto the baking tray.
Press down until they are slightly flattened yet still thick.
Bake for 20 minutes or until set.
Remove from oven and allow to cool for 10 minutes before transferring to a cooling rack. They will set up further once they start to cool down.
Once they have cooled enough, you can ice them with the chocolate icing and garnish with the walnut.
Ingredients for the Chocolate Icing:
- 3/4C almond butter at room temp
- 1/2C cacao powder
- 1/3C maple syrup or honey
- 1/4C coconut sugar – powdered
- 1T vanilla extract
- 8T almond milk
- Pinch salt
Method:
Place all ingredients in a high powered blender.
Using a tamper, and the blender on medium speed, work the ingredients in by stirring with the tamper. Keep working the ingredients this way until the mix is smooth and glossy. Keep checking and continue until you have the desired result.
Using a spoon, scoop out icing and spread over the top of the cookies.
Garnish with a whole walnut.
Repeat process until all cookies are iced and garnished.
Place in fridge and allow to set up for an hour.
If you can wait that long!
Store in an airtight container and keep in the fridge.
