Vegetarian Gluten Free Brownies
SO GOD DAMN GOOD!
These Vegetarian Gluten Free Brownies are so easy to make I was literally done making it in next to no time I didn’t even get a chance to film the prep.
I’m actually eating the second last brownie now while I write this recipe post for you.
They are definitely not lasting long in our house. 🤭😋😂

Ingredients:

3/4C gluten free flour

1/2C cacao powder

1C coconut sugar
-
1/2t baking powder
-
pinch salt
-
1/2C egg whites, whisk well

1/3C olive oil
-
1t vanilla extract
-
1C chocolate chips (reserve some for topping).

Optional: Add 1/2C raspberries to the mix and extra for topping
Method:
Heat oven to 180°C. Line an 8 inch square pan with baking paper.
Combine flour, cacao, baking powder, salt into a bowl and stir to combine. Add most of the chocolate chips – keep some leftover for topping.
In a separate bowl, whisk the sugar, egg whites, olive oil, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and stir until combined.
Stir in raspberries if using.
Pour mix into the lined 8” pan.
Top with remaining chocolate chips and extra raspberries if using.
Bake for 20-25 minutes or until firm to touch.
I like to slightly underbake so the middle stays a bit gooey.
Remove from oven and let it cool before cutting into squares.
Store in an airtight container in the fridge and eat for a delicious sweet treat!
PS. For left over yolks use to make a frittata, throw in a quiche or omelette. 😘
