Pavlova Rocky Road Recipe
I just had to make this Pavlova Rocky Road recipe after seeing it go viral on TikTok.
It’s that time of year where a little indulgence never goes astray so here is a delicious sweet treat to add to your Xmas table.
I added cranberries and pomegranate to give it a Xmas twist.
Go make this, it’s super quick and easy to do.
Ingredients for the Pavlova Rocky Road:

290g white chocolate melts

2T melted coconut oil

75g dried Cranberries, finely chopped

1/2 cup rough chopped cashews, toasted

1C white marshmallows, chopped – dusted in icing sugar (choose vegan marshmallows if you are vegan)

50g mini meringues, roughly crushed

1 pomegranate, cut and juice and seeds extracted

Zest of lemon (optional)
Method:
Line a square cake tin with baking paper.
Over a bain marie, melt the white chocolate with the coconut oil.
Add all the remaining ingredients except pomegranate and lemon zest.
Fold with a spatula until combined.
Pour into the prepared pan and press firmly down.
Drizzle over the pomegranate & juice.
Place in the fridge for 1-2 hrs or until solid.
Grate over the lemon zest if using, cut into squares and serve.
Store in an airtight container in the fridge.
