Apple Almond Honey Cake
Felt like cake. So I made cake. With ingredients I had left in the fruit bowl and cupboard. So here we have the Apple Almond Honey Cake! These are often my favourite ways of making things, with limited ingredients, the mind gets creative!
Totally gluten free and processed free, this cake is best served warm with a cup of your favourite tea or coffee.
Some coconut yoghurt for serving would be a beautiful pairing for this dish.
Serves 8-12.
Ingredients:

1C buckwheat flour

1/2C almond meal

1/2C gluten free flour

1/2C almond milk

1/2C coconut sugar

3 medium green apples, blended with 1/4C water to make apple puree.

2 medium green apples, sliced, and tossed in lemon juice – set aside.

1t cinnamon

pinch salt

3T almond butter
-
2T honey
-
3T melted coconut oil

1T chopped almonds
-
1t vanilla essence
-
1t almond essence (optional)
Method:
Turn oven on to 180°C / 355°F and line 20cm spring form cake pan with some baking paper.
In a bowl combine the flours and baking powder, cinnamon, salt, coconut sugar and stir to combine. Add almond butter, almond milk, apple puree, melted coconut oil, honey, vanilla and almond essence and stir to combine.
Pour batter into baking tin and then take your sliced apples and insert them into the batter in a circular shape, leaving about 1cm of apple poking out the top. Repeat the circular design until all apple used up.
Sprinkle crushed almonds over top and bake in oven for 45-50 minutes or until a skewer comes out clean.
Allow the cake to cool slightly before taking spring form pan off. This cake is delightful served warm with some vegan vanilla ice cream or coconut yoghurt on the side.
